Ingushetia is mountain country, and the table shows it. A private jet menu for Magas leans on what the valleys and the Sunzha plain actually produce: young cheese, butter, wheat flatbread, honey, lamb and beef from highland pasture. Local specialities travel well when they are planned for the drawer rather than improvised.
Galuska, the Ingush dumpling in broth, is the dish people ask about first. On an inflight menu it works as a hot dish finished in the oven, with the broth and the garlic sauce packed in separate pots. Hingalsh, the thin flatbread filled with pumpkin or cheese, is better served at room temperature and cut per guest.
Private jet food from the region is simple and generous: boiled lamb, fresh herbs, pickled vegetables, dried fruit, walnuts and Caucasian honey. We adapt the portions and the plating so a guest in the cabin gets a clean plate, not a village feast squeezed into a tray. Ingushetia and Sunzha produce are used when the season allows, and when it does not we say so.
