Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

Salalah on the plate: local specialities for in-flight catering at SLL

Dhofar Governorate has a table of its own, and a private jet menu built here starts from it. The coastal plain around Salalah grows coconut and banana, and the Arabian Sea supplies kingfish, tuna and lobster, so an inflight menu can carry real local specialities instead of generic plates.

Private jet food from Dhofar means Omani halwa, dates, frankincense-scented desserts and spiced rice dishes such as shuwa-style lamb, cooked slowly and packed to be sliced and re-plated in the galley. Private jet platters of grilled fish, fruit and Omani bread travel well, gourmet inflight meals can be plated per seat, and private jet snacks of dates, nuts and coconut keep for the whole leg. Local specialities are marked by what goes in the oven, what stays chilled and what rides with the sauce apart.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Salalah International Airport (OOSA)

Salalah International Airport sits on the Dhofar coastal plain at 73 ft, and its traffic swings with the khareef monsoon, when the green hills fill with Gulf visitors. Private jet catering here is built around that rhythm: coconut, banana and fresh Arabian Sea fish in the warm months, lighter plates when the cabin is full of families. Inflight catering, in-flight catering and aviation catering orders are packed for the galley you actually have, and business aviation catering for executive jet catering flights or diplomatic flight catering movements is handed over at the FBO. Cabin crew meals are packed to match.

Executive jet catering at Salalah International Airport (SLL)

Business jet catering at Salalah is mostly a short brief: who is flying, in which aircraft, what the galley can do. Corporate jet catering for a small team, VIP flight catering for a principal, and charter flight catering for a family on the khareef run all start from that. Luxury inflight catering here can mean Omani lobster and fresh fish, and a private jet chef writes a bespoke menu around the cabin, the slot and the season.

Government flight catering and aviation catering at Salalah International Airport (OOSA)

When a delegation lands at Salalah, the order is cleared by protocol first. Government flight catering, head of state flight catering, VIP aviation catering and state visit aircraft catering all follow the same record: who cooked, who packed, who handed over, with no names on the labels.

Special meals

Special meals for every diet: in-flight catering at Salalah International Airport

Special meals at Salalah start with the local kitchen: Omani cooking leans on wheat, nuts, dairy and sesame, so allergen free, gluten free and nut-free orders are written against those. Kosher, halal, vegan and kids meals are all possible; halal is the default of the region, kosher and vegan are built on separate boards and sealed, and each is marked by seat number and restriction so nothing is opened by mistake.

Ground handling and FBO catering at Salalah International Airport

The handover at Salalah goes through the FBO and your handling agent. FBO catering, catering delivery to the FBO and ground handling catering are all coordinated around the general aviation terminal and the apron pass, with handling agent catering confirmed before the slot.

High loader delivery for jet catering at Salalah International Airport (SLL)

Salalah's apron handles everything from a light jet to a widebody VIP aircraft, and the type decides the loading. Galley catering for a large cabin travels on a high loader up to the main door, while a smaller jet takes airside catering delivery by hand to the stairs. Aircraft provisioning is agreed with your handling agent, with the door height and the galley layout confirmed before the slot.

About the airportOOSA / SLL

About Salalah International Airport: business aviation and airport catering

Salalah, on the Arabian Sea, is Oman's main southern airport. General aviation shares the runway with commercial traffic, and airport catering for business aircraft is handed over through the FBO services at the terminal, with ground handling services arranging the apron pass and the walk to the aircraft.

Business aviation

Salalah is a business aviation hub in miniature, busiest through the khareef from June to September. Inflight catering and in-flight catering orders swell as families and delegations arrive; aviation catering and business aviation catering follow them, executive jet catering suits the quick stops, and diplomatic flight catering covers official arrivals. Cabin crew meals and crew meals ride with each order, and ground handling services keep the apron access in order.

Customs & food import

Oman applies its own customs rules to food brought in by air, and declarations are expected to match what is on board. Menus here lean on local Dhofar produce where possible, and the declaration is agreed with your handling agent and ground handling services before the slot, so the order clears without surprises.

★★★★★VIP AIRLINER
“Between cabin checks at Salalah International Airport, I coordinated vegetarian wraps and colourful salads for 10 guests and explained our concerns about an evening cabin service. The Galley Girls grouped the canapés by service, which was more useful to us than simply receiving a list of dishes. That left time to check the crew provisions properly before the passengers were ready for the next part of the service. I want an aviation catering company to understand crew briefing, and this order gave us a useful starting point.”

★★★★★LARGE CABIN
“I wanted roasted vegetable bowls with separate dressings for 9 guests at OOSA, packed sensibly for a cabin team dealing with different crew meal preferences. The Galley Girls talked through the quantities of snack boxes with us before confirmation, rather than leaving us to guess the portions. When comparing aviation catering companies, I would look closely at portion planning after this experience. It was useful to see the crew provisions listed separately when checking how much space the complete order would require.”

★★★★★CREW MEALS
“Timing and organisation mattered at SLL, where our order of a cheese board and savoury canapés for 10 people involved several individual meal preferences. For flight catering, that attention to packing arrangement made the order noticeably easier to manage. We discussed the dimensions before confirming; The Galley Girls grouped the starters into separate meal boxes that were easy to handle. We placed the sandwiches in their planned storage area without first having to reorganise all the catering boxes.”

Before you order at OOSAAsked by crews
How much does private jet catering cost for a flight out of Salalah when food import rules apply?+

A fair question for Salalah, because customs shape the answer. Fresh fish, dates and local fruit are simple; imported goods can complicate things. We build the menu around what is easy to clear, quote it per dish, and invoice it as a separate order.

What is the lead time for a return leg ordered from Salalah for the way back?+

Order the return when you order the outbound, and the galley is stocked for both. If it comes later, we still handle it, since last-minute orders are normal here.

Do customs affect catering on a short repositioning flight into Salalah with an empty cabin?+

An empty cabin still means customs apply to anything that stays on board. Oman's rules cover food entering the country, so for a short repositioning flight we usually keep the order small and local, and we agree with your handling agent what is loaded and what is declared.

Can you bring food for a delegation or government flight arriving in Salalah?+

For a delegation, bringing food from elsewhere is possible but rarely easier. Customs will ask what it is, and protocol will ask who cooked it. We build from local Dhofar produce with the contact name on file and hand over discreetly.

Is catering part of a charter for a quick turnaround at Salalah?+

Catering is never bundled into a charter. You order it separately, and on a short turn we plan it around the departure time so the galley is stocked once.
