Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

Inflight catering with the flavours of Ōzora (MMB)

Hokkaidō Prefecture is where Japan's cold-water pantry lives, and a private jet menu from Memanbetsu leans on it. The Okhotsk coast gives scallops, salmon and ikura; Ōzora and the surrounding farmland give milk, butter and cheese that travel well chilled. For an inflight menu, that translates into private jet food that is clean, seasonal and simple to re-plate: a scallop carpaccio that stays Chilled, a salmon rice bowl packed with the sauce apart, a potato dish from Hokkaidō that finishes in the galley oven.

Our private jet platters at RJCM are built from local specialities: sliced Hokkaidō cheeses, smoked salmon, sweet corn and cut melon in season. Gourmet inflight meals follow the same logic, a miso-glazed fish, a Hokkaidō beef sukiyaki set, a soup curry that reheats in the oven. Private jet snacks lean on dairy and sweets: milk pudding, butter cookies, roasted potato bites.

Winter shifts the whole menu: heavier, warmer, built for a cold apron. Summer brings melon, asparagus and tomato from the Hokkaidō fields. The point is that local specialities travel in the galley at the right temperature and in the right container, and the aircraft receives food that tastes of the Okhotsk coast, not of a generic hub.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Memanbetsu Airport (RJCM)

Memanbetsu sits on the Okhotsk side of Hokkaidō, a single-runway field where winter sets the rhythm of every departure. Private jet catering here is planned around cold ramps, sealed hot boxes and a handling agent who walks the food to the aircraft. For flight attendants, that means inflight catering that survives a cold apron, in-flight catering packed for the galley you actually have, and aviation catering that arrives labelled by seat. Business aviation catering at RJCM is a short conversation: tail, slot, headcount. Executive jet catering and diplomatic flight catering follow the same discipline, and cabin crew meals are ordered on request and invoiced like the rest.

Executive jet catering at Memanbetsu Airport (MMB)

Business jet catering at Memanbetsu usually follows a short brief: owners and corporate travellers heading into eastern Hokkaidō for visits, fishing trips or winter sightseeing. Corporate jet catering here leans on Okhotsk seafood and dairy. Charter flight catering for a group arriving on a chartered aircraft is written the same way, around the galley on board. VIP flight catering and luxury inflight catering are plated from the private jet chef's notes, with cold items set apart from hot. Each bespoke menu is built from the passenger list, and inflight catering or in-flight catering for the return leg is ordered separately.

When an official party flies into Memanbetsu, the menu is cleared first and cooked second. Head of state flight catering, government flight catering and state visit aircraft catering all share the same procedure: a small named team, labelled by seat, handed over through the handling agent. VIP aviation catering is never announced.

Kosher, halal, vegan and gluten free in-flight catering at Memanbetsu Airport (MMB)

Memanbetsu's kitchen reality is fish, soy, dairy and wheat noodles, which is where allergens hide in Hokkaidō cooking: dashi in a vegetable dish, soy in a marinade, butter in a sauce. Kosher, halal, vegan, gluten free and allergen free meals are planned as a procedure, with separate boards and containers, and we flag what the local ingredients allow. Kids meals and other special meals are written to the passenger list you send.

Crew & pilot mealsOn request

Pilot meals and crew meals at Memanbetsu Airport (MMB)

Memanbetsu crew meals are an add-on you ask for and pay for as a normal line of the order. A rotation that lands at RJCM and turns around quickly wants flight crew meals that eat with one hand: a rice box, a cutlet sandwich, miso soup in a lidded cup. Pilot meals and cockpit meals are packed separately from the cabin, in crew meal boxes marked CREW. Crew catering can include different meals for pilots, so captain and first officer are not on the same dish. Cabin crew meals follow the same pattern: simple, hot or cold, labelled.

FBO catering at Memanbetsu Airport (MMB): delivery to your aircraft

FBO catering at RJCM means delivery to the general aviation terminal or straight to your aircraft. Catering delivery to the FBO is coordinated with your handling agent, and ground handling catering follows the field's airside rules. Handling agent catering is the normal route: tell them the tail and the slot, and we meet them at the apron.

Galley-door delivery and aviation catering at Memanbetsu Airport (MMB)

Aircraft at RJCM range from light jets to larger business types, and the aircraft decides how the food loads. Galley catering is packed for the galley on board, and airside catering delivery goes through your handling agent to the aircraft door. When a cabin needs a high loader, we plan aircraft provisioning around it so trolleys, hot boxes and cold bags go in as one handover.

About the airportRJCM / MMB

Airport catering at Memanbetsu Airport (RJCM)

Memanbetsu Airport serves Ōzora and the Okhotsk coast of Hokkaidō, with a single runway, a regional terminal and a modest apron. General aviation here is a quiet affair, so the handling agent is the person who walks the food to the aircraft. FBO services and ground handling services are small and personal, and airport catering for business aviation works best when the tail, the slot and the headcount reach us early in the day. The ramp is cold in winter, so hot boxes stay sealed until the aircraft door.

Business aviation

Memanbetsu is a small but real business aviation hub for the Okhotsk side of Hokkaidō. General aviation traffic follows the seasons: fishing and sightseeing parties in summer, ski and winter visitors later. Aviation catering, inflight catering and in-flight catering respond to that rhythm, with executive jet catering for owners on visits, business aviation catering for corporate groups, and diplomatic flight catering for official parties. Crew meals and cabin crew meals are a line you add on request, priced and invoiced like any other dish, so the order stays simple for whoever builds the trip.

Customs & food import

Japan applies strict quarantine rules to meat, dairy and fresh produce brought in from abroad, so food arriving from another country can be held at customs. Ordering from Hokkaidō kitchens keeps the food domestic. Your handling agent manages airside access at RJCM, and the FBO services and ground handling services on this field are small enough that one phone call covers the handover. Customs inspection, when required, takes place before loading, and general aviation crews with their own food should expect to declare it.

★★★★★CHARTER
“With a tight boarding window to consider at RJCM, we needed a practical way to serve mini sandwiches and individual desserts to 8 passengers. The Galley Girls gave us an update on the canapés before the handover, which helped us organise the cabin checks. Knowing where the starters were packed meant the crew could begin the relevant checks as soon as the order arrived. The order made in-flight catering feel manageable because the cabin service sequence had been considered beforehand.”

★★★★★CREW MEALS
“Service planning came first at MMB, with 12 passengers choosing mushroom risotto and a green salad and different crew meal preferences influencing our preparation. The Galley Girls labelled the fruit plates in line with our brief, so the cabin team could identify the relevant portions quickly. The breakfast portions were also listed clearly, which made it easier to pass instructions between crew members during preparation. My main takeaway from this vip inflight catering order was the practical approach to packing arrangement.”

★★★★★BUSINESS JET
“Timing and organisation mattered at Memanbetsu Airport, where our order of vegetable tartlets and a dessert selection for 7 people involved limited fridge space. The Galley Girls grouped the fruit plates by service, which was more useful to us than simply receiving a list of dishes. For private jet catering, that attention to storage requirements made the order noticeably easier to manage. That left time to check the crew provisions properly before the passengers were ready for the next part of the service.”

Ordering for RJCM, in shortAsked by crews
How much does private jet catering cost on a long leg with two services on board?+

Cost is set by menu, headcount and season, not by the airport. On a long leg with two services, the hot course is where most of the difference sits: Hokkaidō beef is dearer than pork, and scallops dearer than potato gratin.

What is the lead time for a short repositioning flight with an empty cabin out of Memanbetsu?+

Short repositioning from RJCM is the easy case for lead time: no guest menu, only crew. Tell us it is empty, and we pack cockpit boxes with the seat labels. Last-minute orders are handled here.

Do customs apply when food is handed over through the handling agent and airside access at Memanbetsu?+

Handing food through the agent is the normal route. Japan's food import rules are strict, so local catering from Hokkaidō is simpler than carrying food in. We coordinate the handover and the labelling so airside staff see what is in each box.

Can you bring food of your own on a night departure or an early morning slot from Memanbetsu?+

Bringing your own food is possible, but customs rules for animal and plant products are strict. For a night departure, ordering from Hokkaidō kitchens avoids inspection delays on the day.

Is catering part of a charter on a return leg ordered from Memanbetsu for the way back?+

Charter contracts rarely include food, and this one does not either. Ordering from here for the return means we know the galley and the passengers, and the food is invoiced as a separate order like any other.
