Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

The local tableCooked so it travels

The Goma table, packed for private jet catering

Goma is built on lava, and the table behind a private jet menu here is Lake Kivu and the Nord-Kivu highlands. Local specialities start with sambaza, the small lake fish, and tilapia from the same water, which travel best fried crisp or grilled and packed with the sauce in its own pot.

Highland produce carries the rest of the inflight menu: cassava leaves, plantain, sweet potato, avocados and Kivu-grown coffee. We treat them as private jet food for a galley with little room, so plantain is portioned for re-plating and the tilapia is sealed per seat.

Goma has no glossy supply chain, so we say so: what reaches the plate depends on the market that day, and we confirm the product before it is promised. If a local item is not at its best, we offer a clean substitute rather than a tired version of the real thing.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Goma International Airport (FZNA)

Goma sits on black volcanic rock at 5,089 ft, and that altitude is the first thing your galley feels: ovens run differently, chilled items stay chilled. Private jet catering here is cooked, sealed and handed over at the FBO for the aircraft. For inflight catering and aviation catering at FZNA, we work from your type, your seat plan and your handling agent. Business aviation catering and executive jet catering orders carry the same label system as diplomatic flight catering, and cabin crew meals are packed on their own.

Corporate and VIP jet catering at Goma International Airport (GOM)

A typical Goma brief for business jet catering is a small group, a tight galley and a menu that tolerates a changed slot. Corporate jet catering and VIP flight catering here lean on grilled tilapia, plantain and fresh fruit. For charter flight catering, luxury inflight catering is a private jet chef's menu cooked per seat: a bespoke menu agreed with you, sealed and labelled, then handed to the FBO at GOM.

State & royalDiscretion, protocol

Private jet catering for government and royal flights at Goma International Airport (GOM)

When a delegation flies through Goma, the order starts with the protocol office, not the kitchen. Government flight catering and head of state flight catering use the same sealed, seat-numbered boxes. VIP aviation catering and state visit aircraft catering are discreet, traced from kitchen to door, and handed to the handling agent.

Special meals

Special meals and allergen free inflight catering at Goma International Airport

Special meals at Goma follow a procedure, not a promise on a label. Each box is cooked on its own board, sealed, and numbered by seat, so a vegan, halal, kosher, gluten free or allergen free plate is traceable from kitchen to galley. Local cooking leans on peanut, fish and cassava, so allergens are asked about before the menu is written. Kids meals are packed the same way, and we confirm what can be sourced locally before we say yes.

Crew & pilot mealsOn request

Crew meal boxes and crew meals at Goma International Airport

Crew meals at Goma are ordered on request and invoiced like the rest, built for a crew that may wait on the ground. Flight crew meals and pilot meals are packed separately from guest trays, and crew catering can be hot or cold. Cockpit meals are made to eat one-handed, crew meal boxes carry no passenger names, and we offer different meals for pilots so captain and first officer never share a dish. Cabin crew meals arrive in their own box, marked CREW.

Ground handling and FBO catering at Goma International Airport

Where the aircraft is parked decides the route at FZNA, so we ask your handling agent first. FBO catering and catering delivery to the FBO are the usual path; the general aviation terminal is the alternative. Ground handling catering is a matter of access, and handling agent catering includes a night handover when the flight lands late.

Aircraft provisioning for large cabins: airport catering at Goma International Airport

Aircraft type decides the loading at Goma: the high loader question comes down to the door sill height and what the handling agent has on the apron. For galley catering on a large cabin, we ask for the type early so airside catering delivery is planned around the equipment available, with trolleys and cases packed to match. On smaller jets the handover is by hand at the steps. Aircraft provisioning here follows the aircraft, not a fixed method, and we confirm access before anything is cooked.

About the airportFZNA / GOM

About Goma International Airport (FZNA): aviation catering and general aviation

Goma International is the airport of a volcanic border city on Lake Kivu, handling general aviation, humanitarian and charter movements on a plateau where altitude shapes the day. Airport catering here is arranged through FBO services and your handling agent, and we tell you plainly what the market can supply. The field works as a small business aviation hub for the region, so ground handling services are the first conversation, before any menu is written.

Business aviation

Business aviation at Goma is small but steady: executive jet catering, humanitarian and diplomatic movements share one ramp, and the field acts as the business aviation hub for the Kivu region. Inflight catering, in-flight catering and aviation catering orders reach the aircraft through the handling agent, so ground handling services and FBO services decide how a box gets to the steps. Business aviation catering and diplomatic flight catering follow the same sealed method, and cabin crew meals and crew meals are packed in their own box.

Customs & food import

Food import into the DRC is checked at the border, and fresh meat, dairy and produce brought in by air can be held or refused. Locally sourced catering avoids that problem, and your handling agent confirms what ground handling services and FBO services need to see. Goma as a business aviation hub sees the same inspection, so we provide a contents list with every sealed box.

★★★★★ROYAL FLIGHT
“Breakfast was already sorted; at GOM, the next request was yoghurt pots and fresh berries for 8 guests, with different crew meal preferences to work around. The desserts from The Galley Girls were organised around the cabin plan, with the later service items kept apart. I appreciated the emphasis on final order confirmation throughout the VIP flight catering arrangements. Our colleague could take over the snack boxes without asking where every component had been placed during preparation.”

★★★★★LARGE CABIN
“Menu approval at Goma International Airport covered a selection of petits fours and sandwiches for 7 guests, leaving us to organise the service around a short ground stop. Our brief for charter flight catering was met with a sensible plan for written menu details. The Galley Girls used a readable packing list for the canapés, which helped when two colleagues checked the order together. We could distinguish the side dishes at a glance instead of lifting lids just to establish what belonged to each service.”

“Food presentation mattered to our 4 guests, but a late menu amendment also had to be considered when organising fresh fruit and breakfast pastries at FZNA. For private jet food, that attention to crew briefing made the order noticeably easier to manage. I asked The Galley Girls to review the sauces quantities against the passenger brief, and the proposed portions made sense. We also checked the breakfast portions before approval, which helped avoid a second round of questions later in the preparation.”

Before you order at FZNAAsked by crews
How much does private jet catering cost at Goma?+

A Goma menu built on one local ingredient, tilapia for example, will cost more than one built on pantry items, and we tell you which is which before you commit. Everything is quoted per menu and invoiced as a separate order.

What is the lead time for catering at Goma?+

Goma weather decides departures more than any schedule, so lead time is a conversation about the window, not a rule. Send the tail and the slot, and we plan around fresh product. Last-minute orders are handled; we simply tell you what is realistic to source.

What about customs for inflight catering at Goma?+

In practice, customs and access at Goma mean the box goes through the FBO or handling agent's route. We give them the list, and we pack with fresh produce kept separate so nothing is questioned unnecessarily.

Can you bring food of your own into Goma?+

Carrying food into Goma works for packaged items, but fresh meat, dairy and produce can be held at customs. With a count that moves at the last minute, we handle the extra seats rather than leave you short.

Is catering part of a charter into Goma?+

No. Catering is a separate order, invoiced separately. On a charter into Goma where the crew may wait on the ground, we suggest ordering crew meals at the same time so duty time is not made harder.
