Private jet catering at Stella Maris Airport (MYLS / SML), Stella Maris

Catering to your aircraft in Stella Maris.

Stella Maris takes small jets, turboprops and the odd charter into a quiet Long Island strip, and our job is to meet the crew at the aircraft with trays that suit the galley. Cooked for the sector, labelled by seat and handed over via the FBO.

Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

Stella Maris on the plate: local specialities for in-flight catering at SML

A Long Island trip is a seafood trip, and the private jet food we pack for Stella Maris follows it. Grouper, snapper and lobster are the fish of the island, conch is the signature, and our local specialities are cooked and packed so the cabin crew only has to finish them. Hot dishes ride in oven-ready trays, cold dishes arrive chilled, and sauces always travel in a separate pot.

For the inflight menu out of MYLS, we start from the fish and the bread. Johnnycake and Bahamian bread carry the table, conch salad and tropical fruit make the cold course, and pigeon peas and rice stand beside a grilled fish. Private jet platters for a mixed cabin, gourmet inflight meals for a dinner sector and private jet snacks for the lounge seating all come off the same island list.

The private jet menu for Stella Maris is short on purpose. Local specialities, a handful of Bahamian classics, and fish bought in season rather than frozen into a catalogue. Think lobster tail when the season allows, a sweet coconut finish, and a fruit board with whatever the island produced. Everything is packed with its service note, so a flight attendant can read the drawer without asking.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Stella Maris Airport (MYLS)

Stella Maris sits on a 10 ft strip of Long Island, a small field where a private jet often arrives with a full cabin and a galley sized for a lunch rather than a banquet. Private jet catering here means planning around island supply: the fish is local, the produce is often flown in, and the cabin has to be provisioned for the sector ahead. We cook, pack and label for the galley you have, and the handover happens at the FBO or with your handling agent. It is inflight catering written by former VIP flight attendants, and business aviation catering for the crew as much as the guests, whether the flight is a family charter, an executive jet catering request or a diplomatic flight catering file. Cabin crew meals are added to the order only when you ask for them, and they appear as their own invoiced line.

Private jet catering in Stella Maris for business and VIP flights (SML)

Corporate and executive charters into Stella Maris tend to be small cabins with a long weekend ahead: a family, a few friends, a pilot team on a layover. Business jet catering here is built around a private jet chef's plan, a bespoke menu, VIP flight catering for the party and charter flight catering for the crew, with corporate jet catering style labels for each seat. Luxury inflight catering stays simple: fish, fruit, bread, and a clear finish note.

State & royalDiscretion, protocol

Diplomatic and state visit aviation catering in Stella Maris (MYLS)

Government flight catering into Stella Maris works on discretion: a named team, a cleared menu, labelled trays and a handover that does not draw attention. Head of state flight catering follows the same rules at a smaller scale, and VIP aviation catering is organised around the protocol office. State visit aircraft catering for the Bahamas starts from the programme, not the kitchen.

Dietary requirements and aviation catering at Stella Maris Airport (MYLS)

Island cooking hides allergens in places a menu does not show: conch fritters carry wheat, peas and rice can be cooked in pork fat, and the fish stock is shared across dishes. For Stella Maris we write the dietary request into the order first, then pick the dish: kosher, halal, vegan, gluten free and allergen free meals are cooked on their own board and sealed in a separate box, with kids meals and other special meals packed to the same procedure and labelled by seat.

Crew & pilot mealsOn request

Crew meals for pilots and cabin crew at Stella Maris Airport (SML)

For the people flying, not the people sitting behind them, we pack crew meals separately. Flight crew meals travel in sealed boxes, pilot meals are two different dishes when policy requires, and crew catering is ordered on request and billed on its own line. Cockpit meals avoid sauces and crumbs, crew meal boxes are labelled CREW, and different meals for pilots are written into the order.

FBO catering at Stella Maris Airport (SML): delivery to your aircraft

On a small field like MYLS, the FBO is the front door: FBO catering is left with the handling agent at the general aviation terminal, ground handling catering is agreed by phone, and the catering delivery to the aircraft follows the slot. Handling agent catering stays simple, with one contact and one handover.

High loader delivery for jet catering at Stella Maris Airport (SML)

Stella Maris is a small field, so galley catering is planned around the aircraft type: a light jet or turboprop takes its trays up the stairs by hand, while a larger cabin may need airside catering delivery with a high loader brought by the handling agent. We confirm door height and galley layout before packing, so aircraft provisioning at MYLS arrives in the right containers, never in trays that will not fit the drawers.

About the airportMYLS / SML

Aviation catering and business aviation at Stella Maris Airport (SML)

Stella Maris Airport serves Long Island in the Bahamas, a general aviation field with a modest terminal, a short apron and a clientele of private owners, lodge guests and Out Island charters. Airport catering here is planned around supply, season and aircraft type, and FBO services and ground handling services at MYLS stay small and personal.

Business aviation

Business aviation at Stella Maris is seasonal and weather-led: winter brings charter traffic and fishing parties, summer is quieter. Business aviation catering and executive jet catering for the island fit the same pattern, with ground handling services arranging the apron side, while inflight catering and in-flight catering for outbound flights are adapted to aircraft and sector. Aviation catering, diplomatic flight catering when a delegation visits, and cabin crew meals complete the picture of a small business aviation hub; crew meals are ordered on request and invoiced on their own line.

Customs & food import

Food entering the Bahamas is subject to customs and agricultural checks, and fresh meat, fruit and dairy arriving from abroad may be restricted. Meals we hand over locally are already inside the country, so the practical advice is to declare imported provisions and let the handling agent, who provides the ground handling services on the apron, guide what stays aboard.

“On this departure from SML, 3 passengers had chosen yoghurt pots and fresh berries, and a late menu amendment needed to be reflected in the order. We discussed the dimensions before confirming; The Galley Girls grouped the breakfast portions into stackable containers that were easy to handle. I could hand the crew provisions to a colleague with a short explanation instead of unpacking the whole order. This experience of crew meals gave us a useful reference for managing storage requirements on another departure.”

★★★★★CREW MEALS
“Good preparation made the difference at Stella Maris Airport, where 8 guests expected roasted vegetable bowls with separate dressings despite a changing departure schedule. I wanted clear identification on the starters; The Galley Girls made the packing arrangement easy to compare with the order. The order made FBO catering feel manageable because the meal organisation had been considered beforehand. The main courses were also listed clearly, which made it easier to pass instructions between crew members during preparation.”

★★★★★LARGE CABIN
“An order of beef fillet with roasted potatoes for 10 people at MYLS had to be organised around an evening cabin service. This experience of airport catering gave us a useful reference for managing cabin service sequence on another departure. The Galley Girls updated the snack boxes in the written order and sent back a confirmation that clearly showed our amendments. There was no need to reconstruct the fruit plates quantities from several messages during the final departure checks.”

What crews ask before Stella MarisAsked by crews
How much does private jet catering cost for a delegation or government flight at Stella Maris?+

Cost is built from what the delegation actually eats, not from a menu card: protocol rules, the headcount, any sealed or traceable meals and the staff on the aircraft all move the figure. A government party flying private jet charter into Long Island usually asks for a cleared menu and separate crew meals, which we price line by line and confirm before anything is cooked.

What lead time works best when the departure slot and turnaround are tight at MYLS?+

Think of lead time as a conversation about the slot. When the turnaround is long, we can cook hot dishes and hand them over with the handling agent; when it is short, we steer toward items that travel well. Late changes are handled by phone, any hour.

How do customs work for catering on a larger aircraft with a bigger galley into Stella Maris?+

Bahamas customs look at fresh meat, fruit and dairy arriving from abroad, and a big cabin with a full galley has more to declare. Food we cook on the island is handed over locally, so nothing we pack needs to cross a border to reach your aircraft.

Can you bring food from home for a night departure or early morning slot at Stella Maris?+

A night departure changes what is practical. Fresh food brought from home may not survive a long wait or a customs check, while meals packed locally are already inside the country. We can hand over at the FBO whenever your slot requires, day or night.

Is catering part of a charter on a long leg with two services on board from Stella Maris?+

Two services on a long sector mean double the galley work, which is why we label each tray by service and by seat. The charter contract does not carry the catering; you order it from us and we invoice it as a separate item.
