Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

The local tableCooked so it travels

Inflight catering with the flavours of Minamidaito (MMD)

Minamidaito belongs to Okinawa Prefecture, but it is a long way in character from the main island: a sugarcane island, with the Daito identity of its own, and the private jet menu we write for ROMD reflects that. A private jet menu for Minamidaito starts from what grows and cooks well on Okinawa: goya, beni-imo purple sweet potato, Okinawa soba, umibudo sea grapes, and the brown sugar the Daito islands are known for. We treat these as local specialities and describe each one as it travels in a galley.

The inflight menu for a Minamidaito departure is built around Okinawan and Daito food. Private jet food here leans on rafute braised pork belly, which re-plates well from the oven with the sauce apart; on Daito soba, served as a cold dish and chilled until the cabin; and on beni-imo sweets for the end of the meal. Private jet platters of fruit and tropical produce, gourmet inflight meals built around Okinawan ingredients, and private jet snacks such as brown sugar kokuto and chinsuko cookies round out the local specialities of Okinawa Prefecture.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Minamidaito Airport (ROMD)

On Minamidaito, the island that grows sugarcane and ships very little else, a jet on the apron at ROMD is a rare sight, so the menu is built before the aircraft lands. Our private jet catering for Minamidaito Airport is packed by former VIP flight attendants who know what a small galley can finish. Executive jet catering leaves the kitchen chilled, in the oven, or sauce apart, and diplomatic flight catering follows the protocol brief. Cabin crew meals are boxed and marked, and the whole order, including any in-flight catering for the next leg, is handed over plane-side.

Business jet & VIP jet catering at Minamidaito Airport

Corporate jet catering at Minamidaito is mostly a matter of knowing the aircraft. A bespoke menu from a private jet chef might be a cold Daito soba and a rafute plate for four, with VIP flight catering notes by seat. Business jet catering for a charter flight catering brief and a luxury inflight catering order are written the same way: type, galley, headcount, then the dishes.

State & royalDiscretion, protocol

Government flight catering and aviation catering at Minamidaito Airport (ROMD)

Government flight catering at ROMD is rare and therefore carefully briefed. Head of state flight catering, VIP aviation catering and state visit aircraft catering all start with a protocol review before anything is cooked: who eats what, who handles the trays, who signs for the delivery. Discretion matters more than menus here.

Special meals & dietary requirements: in-flight catering at Minamidaito Airport

At Minamidaito the dietary question is less about availability than about what hides in island cooking: bonito dashi, pork fat in the braise, soy and wheat in the noodles. Kosher and halal orders for ROMD are planned as a procedure: separate board, separate box, sealed. Vegan and gluten free plates are built from rice, tofu and tropical vegetables, and anything labelled allergen free is cooked and packed apart from the rest. Special meals for kids meals are usually a plain rice and fish plate, marked by seat number on the lid.

Crew meals and cockpit meals in Minamidaito (ROMD)

On request, we pack crew meals for the Minamidaito turnaround: a hot taco rice for the cabin, a lighter cold plate for the cockpit. Ground handling and FBO catering at Minamidaito Airport

FBO catering at Minamidaito means a handover at the general aviation terminal or at the aircraft, depending on the apron arrangement. Catering delivery to the FBO is coordinated with your handling agent, who controls airside access. Ground handling catering and handling agent catering are the same job here: one contact, one slot, one signature.

High loader and aircraft provisioning: aviation catering at Minamidaito Airport

What reaches the aircraft at ROMD is set by the airframe, not by the menu. A turboprop or light jet on Daito island is loaded through its own door, box by box, from the handover point beside the apron. A bigger cabin with a raised sill is another case: galley catering for it means airside catering delivery on a high loader, and the vehicle and the gate are your handling agent's call. For aircraft provisioning here, give us the type and what the galley holds, drawers, oven, chiller, and we cook and label to match.

About the airportROMD / MMD

About Minamidaito Airport (MMD): airport catering for business aviation

Minamidaito Airport (ROMD / MMD) is a small airport on Daito island in Okinawa Prefecture, at 167 ft, with a small terminal and limited services. Airport catering here follows island rhythms; general aviation traffic is light, FBO services and ground handling services are arranged by request.

Business aviation

Business aviation hub is a stretch for Minamidaito, but private flights do come: operators repositioning in the Pacific, visiting delegations, VIP trips to the Daito islands. Inflight catering and in-flight catering for these flights, aviation catering and business aviation catering for the operators, executive jet catering for owners and diplomatic flight catering for visitors all work from the same plan. Cabin crew meals complete it.

Customs & food import

Japanese customs and quarantine regulate meat, fruit, eggs and plant products entering the country, and Minamidaito follows the national rules like any other port of entry. Food loaded on the island avoids the problem; food carried in from abroad may be declared, held or removed. Your handling agent can confirm what the officer needs.

★★★★★LARGE CABIN
“Getting grilled salmon with a lemon dressing ready for 9 guests at MMD required an order that accounted for an evening cabin service. Our request to The Galley Girls focused on the breakfast portions, with enough detail to distinguish passenger portions from additional provisions. We also checked the snack boxes before approval, which helped avoid a second round of questions later in the preparation. Our brief for business aviation catering was met with a sensible plan for meal organisation.”

★★★★★VIP AIRLINER
“Our priority at Minamidaito Airport was vegetable tartlets and a dessert selection for 9 passengers, with two separate meal services shaping the service plan. The side dishes from The Galley Girls were organised around the cabin plan, with the later service items kept apart. My main takeaway from this jet catering order was the practical approach to storage requirements. We left the desserts stored until needed, which kept the first service manageable and reduced unnecessary handling.”

★★★★★LIGHT JET
“The cabin briefing at ROMD included 4 passenger meals, a request for vegetarian wraps and colourful salads, and instructions addressing different crew meal preferences. Our brief for VIP flight catering was met with a sensible plan for crew briefing. The Galley Girls prepared the sauces for assembly in the galley, with the accompanying elements easy to locate. The main courses stayed together in one group, so another crew member could follow the same plating sequence.”

Minamidaito in five questionsAsked by crews
How much does private jet catering cost for a delegation or government flight into Minamidaito?+

Delegations flying to Minamidaito often ask us first about volume. Ten guests on one menu with three crew meals cost very differently from fourteen guests on two menus with sealed halal plates. Ingredients matter as well: umibudo and fresh local fish are dearer than tofu salad. Send the brief and we will price it line by line.

What is the lead time for private jet catering at Minamidaito when the passenger count changes at the last minute?+

When the cabin goes from four to seven, we rebalance the trays. Lead time on the island depends on local produce, the customs situation and the slot, so we recommend sending the first version of the order early and amending it. Last-minute changes are handled, with the menu simplified when needed.

Customs: what applies to food on a long leg with two services on board, arriving at Minamidaito?+

Japanese customs and quarantine pay attention to fresh fruit, meat products and eggs arriving by air. At Minamidaito, a two-service flight means two sets of labelled trays; if you land with unused first-service food, it may be sealed or declared. Our local packing for the departure leg sidesteps the question.

Can you bring food on a short repositioning flight with an empty cabin into Minamidaito?+

An empty cabin does not exempt the crew meal from customs. If you carry sandwiches or fruit from abroad, expect questions at Minamidaito. We pack a light box, such as a cold Daito soba or a taco rice, for pickup at the FBO.

Is catering part of a charter into Minamidaito when the handling agent controls airside access?+

No, it is a separate order. The charter price at Minamidaito does not include meals, and the handling agent decides who goes airside. We send the details to your agent and keep the invoice apart from the flight.
