Mafia Airport sits on a short coral island strip off the Rufiji delta, and the aircraft that land there come for the marine park, not for a city. Crew meals on Mafia are ordered on request and invoiced like the rest of the order. Flight crew meals can be hot or cold, boxed for the cockpit, and pilot meals can differ from each other when the operator's policy requires it, which means different meals for pilots in separate boxes. Crew catering at HTMA suits short turns with cockpit meals eaten from one hand, and crew meal boxes are marked CREW so nobody opens a guest tray by mistake. Cabin crew meals are packed apart from the pilots', and a dish heavy on shellfish can be swapped out.

Mafia Airport is a small airstrip serving Kilindoni and the marine park island, used mostly by light aircraft and charter turboprops. Airport catering here follows the local rhythm of boats, fishing and lodges.
Business aviation catering at Mafia arrives with a seasonal peak between October and March, when divers and whale shark guests charter in. Inflight catering, in-flight catering and aviation catering orders are ordinary here, as is executive jet catering for lodge owners. Diplomatic flight catering is rare but cleared through protocol, and cabin crew meals are added to any order. General aviation dominates the field; FBO services and ground handling services stay light, and the island acts as a quiet business aviation hub only in season.

It depends on what you ask for. Fresh lobster and prawns cost more than a cashew-and-fruit box. A return leg ordered from Mafia together with the outbound is quoted as one menu, with the second meal timed for the way back.
Mafia runs on daylight and boat schedules, so an early morning departure favours dishes prepared the evening before, packed cold. A night departure is planned around airside access. Last-minute requests are handled.
Customs at a small island airport is a short conversation: declare what arrives, keep local food local. The handling agent arranges access to the apron and meets the delivery.
Bringing food from outside Tanzania means customs questions; buying here avoids them. For an empty repositioning leg, two cockpit meals and some fruit often cover it.
