Tocantins sits between the Amazon and the cerrado, and its private jet menu follows that line. River fish from the Tocantins and Araguaia basins, such as pintado and tucunaré, make strong inflight menu items because they hold well when grilled and served hot from the galley oven. Capim dourado, the golden grass that gives Jalapão its handicraft, is not eaten, but the region's cerrado fruit is: pequi, buriti, baru nuts and cajuzinho do cerrado show up in sauces, desserts and private jet snacks.
For private jet platters we build cold boards around white cheese from Tocantins, cured meats, tropical fruit and baru nut crumble, all of it travelling chilled. Gourmet inflight meals can include moqueca of local fish with the sauce apart, rice with pequi, or beef with farofa re-plated at altitude. These local specialities give a Palmas departure a clear sense of origin without asking much of the galley, and every private jet food order is packed to the aircraft's equipment and the seat plan.
Dessert and breakfast items lean on the same pantry: tapioca crepes with coconut or cheese, bolo de macaxeira, and fruit from Palmas markets. None of this needs a full kitchen on board, which is the point of a private jet menu written for the Tocantins.
