Private jet catering at Daru Airport (AYDU / DAU), Daru

Catering to your aircraft in Daru.

At Daru the apron is the first thing to plan for. Humidity and heat at 20 feet above the water mean we send cold, sealed trays and keep the hot items for the oven on board.

Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

The local tableCooked so it travels

Inflight catering with the flavours of Daru (DAU)

On this coast the table is set by the river and the sea. Daru is a fishing island, and the local specialities start with mud crab, barramundi and prawns from the Fly River delta and the Torres Strait side. For a private jet menu out of Daru we keep the crab picked and chilled, the barramundi portioned for re-plating, and the prawns cold on ice with the sauce in its own pot. Sago, the staple starch of the province, comes as a firm cake that travels without weeping. Banana and coconut round out private jet food here: roasted, sliced, packed dry. Every inflight menu for Western Province has to cope with heat on the apron, so cold platters carry most of the weight and hot items finish in the oven on board.

Daru gives a private jet menu a clear identity: river and sea. Mud crab, barramundi, prawns and smoked fish are the local specialities of Western Province, and each has a galley rule. Crab and prawns travel chilled and sealed. Barramundi is cooked, portioned and re-plated. Sago and sweet potato are the starches, cut to the tray. Tropical fruit, pineapple, papaya and coconut, fills the inflight menu with something that does not need heat. For the crew, we pack rice and grilled fish in separate compartments so nothing steams itself soft.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Daru Airport (AYDU)

Few airports in Papua New Guinea are as tied to water as Daru (DAU). The strip serves the Western Province, and what lands there is mostly turboprops and light jets. Private jet catering for this field is written for a small galley and a hot apron. Our aviation catering and inflight catering cover business aviation catering, executive jet catering, diplomatic flight catering, in-flight catering and cabin crew meals, ordered and invoiced separately from the flight.

Business aviationOur core

Private jet catering for business flights from Daru (AYDU)

A business jet into Daru usually brings a small party and a tight galley. For business jet catering and corporate jet catering, we build the order around what that cabin can finish: chilled seafood, a hot barramundi, fruit cut per seat. Executive and charter flight catering follow the same logic, with a private jet chef writing a bespoke menu around the type, and VIP flight catering or luxury inflight catering adding plated service when the oven allows.

State & royalDiscretion, protocol

Private jet catering for government and royal flights at Daru Airport (DAU)

A government flight into Daru is an uncommon sight, and government flight catering for it is kept low-key. For head of state flight catering and VIP aviation catering, the menu is cleared with protocol before anything is cooked, and a named team packs it. State visit aircraft catering follows the same path, with traceability on every item and no names on the trays.

Special meals

Kosher, halal, vegan and gluten free in-flight catering at Daru Airport (DAU)

Local cooking here leans on seafood, coconut and sago, so allergens hide in sauces and shared surfaces. Kosher, halal, vegan and gluten free meals are prepared apart, special meals are tagged by seat number, allergen free orders are kept sealed, and kids meals are built around simple, mild dishes.

Crew & pilot mealsOn request

Crew meal boxes and crew meals at Daru Airport

Crew meals for a Daru rotation are a line you add on request, and they are invoiced alongside the rest of the order. Flight crew meals and pilot meals travel in separate boxes, with different meals for pilots when the operator asks, so captain and first officer never share a dish. Crew catering for cockpit meals is packed to eat one-handed, and crew meal boxes keep rice and fish apart. Cabin crew meals are handled the same way, a long ground wait in Western Province being the usual reason to order.

DeliveryEvery FBO

Airport catering at the FBO or general aviation terminal, Daru Airport

On this field, the general aviation terminal and the handling agent are the routes in. We arrange FBO catering and catering delivery to the FBO so the handover happens at the aircraft. Ground handling catering and handling agent catering run through one confirmed order, with the slot and tail as the reference.

Aircraft provisioning for large cabins: airport catering at Daru Airport

Galley catering for aircraft at Daru depends on the type. A turboprop or light jet loads through a low door and needs no high loader, while a larger cabin may. Airside catering delivery is made by hand or small vehicle, and aircraft provisioning follows the galley layout the operator sends us.

About the airportAYDU / DAU

Aviation catering and business aviation at Daru Airport (DAU)

Daru Airport sits on an island in the Torres Strait approaches, and general aviation shares the strip with scheduled flying. Airport catering for private aircraft here means a small apron, heat off the water and a short runway. FBO services and ground handling services are modest, so the handling agent is the contact for every handover.

Business aviation

Business aviation at Daru is occasional and purposeful, charter and operator flights into the Western Province. It is not a business aviation hub, so each order is planned individually. Inflight catering, in-flight catering and aviation catering follow the aircraft; business aviation catering suits resource and provincial trips; executive jet catering covers the larger cabins; diplomatic flight catering is cleared in advance; and cabin crew meals are packed on request.

Customs & food import

Papua New Guinea applies quarantine to imported food, so we source locally where we can. Mud crab, barramundi, prawns, sago and fruit from the province avoid most import handling. FBO services and ground handling services here do not change the rule: we tell you early if an item would need clearance and propose a local substitute.

★★★★★LARGE CABIN
“An order of a light pasta dish with grilled vegetables for 8 people at AYDU had to be organised around several individual meal preferences. I would discuss business aviation catering with them again, especially when storage requirements needs careful coordination. The Galley Girls gave us an update on the desserts before the handover, which helped us organise the cabin checks. The cabin team could match the canapés to the request before moving on to the remaining departure tasks.”

★★★★★VIP AIRLINER
“Food presentation mattered to our 2 guests, but a late menu amendment also had to be considered when organising a breakfast basket with individual preserves at DAU. After a final adjustment to the sauces, The Galley Girls gave us one revised order summary to work from. There was no need to reconstruct the main courses quantities from several messages during the final departure checks. I appreciated the emphasis on portion planning throughout the jet catering arrangements.”

★★★★★BUSINESS JET
“Getting prawn salad and small fruit plates ready for 9 guests at Daru Airport required an order that accounted for several individual meal preferences. The Galley Girls grouped the crew provisions by service, which was more useful to us than simply receiving a list of dishes. We left the breakfast portions stored until needed, which kept the first service manageable and reduced unnecessary handling. For VIP flight catering, that attention to written menu details made the order noticeably easier to manage.”

Questions crews ask about DaruAsked by crews
How much does private jet catering cost for a flight out of Daru?+

Cost depends on what the galley can finish. Where the aircraft has only a drawer and a warmer, we build around chilled platters and sago cakes. Where it has an oven, barramundi and curry become possible, and the quote reflects that choice.

What lead time should I allow for catering at Daru (AYDU)?+

The lead time question at Daru is really a customs question. Food coming in from abroad meets quarantine rules, while local crab, barramundi and sago do not. Send the tail and slot early where you can, and last-minute requests are still taken.

What do customs mean for catering at Daru?+

Papua New Guinea restricts imported fresh food, so we lean on one product above all: mud crab from the Western Province waters. It is local, it travels sealed on ice, and it avoids the questions an imported menu would raise.

Can you bring food of your own onto the aircraft at Daru?+

Food you carry in is your responsibility, and Papua New Guinea quarantine can apply to it. On a short ground time, we suggest letting us deliver chilled, labelled trays so the galley is loaded once and closed.

Is catering part of a charter into Daru?+

Not part of it, no. A private jet charter price covers the trip, and catering is a separate order. If the wait at AYDU runs long, a boxed crew meal and fruit make sense, billed like the rest of the order.
