Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

What Poza Rica brings to your in-flight catering (PAZ)

Veracruz is the Gulf coast's kitchen, and Poza Rica sits at the northern edge of Totonac country, a short step from the cultural landscape around El Tajín. A private jet menu for Veracruz leans on what the coast and the sierra foothills actually produce: red snapper, shrimp, vanilla from Papantla, coffee, citrus, chayote and plantain. An inflight menu here has to cope with humidity, so we favour dishes that travel chilled or finish in the aircraft oven. Private jet food from Poza Rica should taste of the place without needing a kitchen on board.

Among the local specialities of Veracruz, huachinango a la veracruzana is the dish passengers ask for first, and the one that needs the most thought for a galley: the sauce travels apart and the fish is re-plated. Private jet platters carry tropical fruit, queso fresco and smoked fish; gourmet inflight meals take a Gulf shrimp cocktail or a vanilla dessert; private jet snacks run to plantain chips, roasted peanuts and Veracruz coffee. For Veracruz and Poza Rica alike, the private jet menu and the inflight menu are written around heat, humidity and a small galley.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at El Tajín National Airport (MMPA)

El Tajín National sits at 497 ft in the humid Veracruz lowlands, where oil-field charters and visitors to the Totonac ruins share one small apron. For private jet catering at MMPA, the brief starts with heat: nothing leaves a cooler without a plan for the ramp. Inflight catering here is built for short sectors, and in-flight catering trays are packed to survive a hot cabin before the air comes on. Aviation catering for Poza Rica leans on Gulf seafood and Veracruz vanilla. Business aviation catering and executive jet catering are quoted per menu, diplomatic flight catering runs through protocol, and cabin crew meals are ordered on request.

Business aviationOur core

Private jet catering for business flights from Poza Rica (MMPA)

Business jet catering at PAZ is usually a light brief: a few passengers, a corporate jet, a short sector. We plan corporate jet catering around the humid ramp, so VIP flight catering takes the form of chilled trays and a single hot dish. Charter flight catering for oil and energy clients follows the same logic, and luxury inflight catering uses Gulf seafood and vanilla. A private jet chef writes the bespoke menu around the galley type.

Inflight catering for government and royal flights at El Tajín National Airport

When an official delegation lands at El Tajín National, the protocol office speaks first and the kitchen second. Government flight catering is traceable and sealed, head of state flight catering uses a named team, VIP aviation catering stays quiet, and state visit aircraft catering is coordinated with the handling agent at Poza Rica.

Special meals

Special meals and allergen free inflight catering at El Tajín National Airport

Veracruz cooking hides allergens in plain sight: peanuts in moles, shellfish stock in rice and sauces, wheat in tortilla alternatives and pan dulce. At Poza Rica we treat dietary requests as a procedure: kosher, halal, vegan, gluten free and allergen free meals are planned, cooked and packed apart from the guest trays, and kids meals and other special meals follow the same labelling by seat number.

Crew & pilot mealsOn request

Flight crew meals on request at El Tajín National Airport

On a turn at MMPA the crew has little time and no kitchen, so crew meals are ordered with the flight, on request, and billed with the rest. Flight crew meals, pilot meals and crew catering are packed apart from guest trays; cockpit meals travel in crew meal boxes, and different meals for pilots mean captain and first officer never share a dish.

Ground handling and FBO catering at El Tajín National Airport

At PAZ the FBO is where the trays change hands. FBO catering is handed over to your handling agent, catering delivery to the FBO follows the slot you give us, the general aviation terminal receives the cooler, and ground handling catering and handling agent catering are coordinated so the aircraft is loaded without delay on the ramp.

Aircraft provisioning and airport catering at El Tajín National Airport (MMPA)

El Tajín National handles mostly light and mid-size aircraft, so galley catering here is usually a cooler and a few trays carried to the cabin door. When a larger aircraft calls at MMPA, airside catering delivery and aircraft provisioning are agreed in advance with your handling agent, who confirms whether a high loader is needed or the order goes aboard by hand.

About the airportMMPA / PAZ

About El Tajín National Airport (PAZ): airport catering for business aviation

El Tajín National Airport serves Poza Rica and the northern Veracruz coast, with a single runway and a small general aviation apron. Airport catering here is written for private operators and corporate flights, and FBO services and ground handling services at PAZ are modest, so the low, humid setting at 497 ft shapes every order.

Business aviation

PAZ works as a small business aviation hub: oil-company shuttles, official visits and cultural travel to the Totonac ruins. Inflight catering and in-flight catering follow the slot the handling agent confirms, while aviation catering and business aviation catering are built around a light galley. Executive jet catering is cooked for the aircraft type, diplomatic flight catering goes through protocol first, and cabin crew meals and crew meals are added on request. Ground handling services on this ramp are lean, which keeps a handover simple.

Customs & food import

Agricultural inspection at Mexican airports applies to private aircraft too, and FBO services at MMPA will tell you what has to be declared on arrival. Locally cooked, sealed catering sidesteps that problem, and ground handling services at Poza Rica can confirm any paperwork before the trays go aboard.

“Working around a family lunch request at El Tajín National Airport, I asked for fresh fruit and breakfast pastries in portions appropriate for our 4 passengers. I want a private jet catering company to understand portion planning, and this order gave us a useful starting point. I gave The Galley Girls our storage brief and asked for the main courses to arrive in individual containers. The canapés were easy to locate, leaving the crew free to focus on the remaining cabin preparation.”

★★★★★VIP AIRLINER
“Passenger preferences led us to a mezze selection with flatbreads at MMPA; 9 portions were needed, with a family lunch request factored into preparation. When comparing private jet catering companies, I would look closely at meal organisation after this experience. The Galley Girls labelled the sandwiches in line with our brief, so the cabin team could identify the relevant portions quickly. Keeping the snack boxes identifiable helped the colleague taking over service understand the order without another long explanation.”

★★★★★BUSINESS JET
“Getting chicken skewers with a couscous salad ready for 4 guests at PAZ required an order that accounted for a changing departure schedule. The breakfast portions from The Galley Girls were organised around the cabin plan, with the later service items kept apart. That left time to check the side dishes properly before the passengers were ready for the next part of the service. My search for "private jet catering near me" led to a practical conversation about packing arrangement.”

The El Tajín National questionsAsked by crews
How much does private jet catering cost at El Tajín National?+

Compare two menus for the same cabin: smoked fish tostadas and fruit, or a full snapper dish with sauce apart and dessert. Same airport, different cost. Private jet catering here is quoted menu by menu, with your handling agent informed of the handover.

What is the lead time for private jet catering at Poza Rica?+

Early morning departures at PAZ work well for catering because breakfast items such as fruit, pan dulce and coffee are always in the kitchen. The lead time question is answered by the slot you give us, and last-minute orders are handled.

What about customs for catering on a government flight to Poza Rica?+

Customs on a government movement is a matter of paperwork and sealed packaging. Local produce from Veracruz is bought, cooked and labelled in Mexico, which keeps inspection simple at El Tajín National.

Can you bring food into Mexico on a private jet to Poza Rica?+

Customs rules on food import are strict in Mexico, and agricultural inspection applies even to private aircraft. Rather than risk seizure at PAZ, order cooked and packed meals locally and keep personal food to a minimum.

Is catering part of a charter into Poza Rica?+

No, a private jet charter does not include catering, and Poza Rica is no exception. Order the menu separately, tell us the tail, and we work with your handling agent on ramp access.
