Daşoguz Region is Khorezm country, and the table here is built on what the oasis produces: lamb, rice, carrots, onions, melons and flat bread from the tandyr. A private jet menu for this airfield starts there. Plov is the dish people mean when they say local specialities: rice and lamb cooked in a kazan, which travels well if it is packed in a sealed tray and heated in the galley oven.
For an inflight menu, the Daşoguz melon is the thing to ask about in summer. It is sliced and packed cold, never sealed wet, and it replaces the usual citrus plate. Private jet food from here also means dried apricots, nuts, pistachio sweets and green tea in the thermos, the way the region serves it. Chilled plates, salads of cucumber and tomato, and yoghurt-based dressings sit apart from the hot course so they never touch the lid of a tray from the oven.
The Daşoguz region touches the Uzbek border and the Karakum, so the supply is seasonal and sometimes thin in winter. If a product is not at the market, we say so and substitute from the same family. We put the real sourcing in front of you before the order is cooked.
