Ambon is the Maluku capital, and the island table runs on fish, coconut, clove and nutmeg. A private jet menu built here starts with what comes off the boats in Ambon Bay: tuna, skipjack, grouper, reef fish grilled over coconut husk and finished with a sharp lime and chilli dressing.
The classic local plate is ikan kuah kuning, fish in a turmeric broth, and papeda, the sago porridge eaten with it. On a private jet menu we pack the broth in its own container and the sago apart, because papeda sets and cannot be rushed back to texture in a galley.
Ambon's spice heritage is the other thread: nutmeg, cloves, cinnamon and the chilli-laced sambal colo-colo, a raw tomato, shallot and lime relish that goes cold beside grilled fish. For an inflight menu this travels as a sauce apart.
These are the local specialities we cook around for private jet food at Pattimura International in Maluku. Any dish you do not see here, we can cook on request, and gourmet plates for a long sector are discussed with the flight attendant before the slot.
