Sulawesi cooking uses shrimp paste, fish sauce, peanuts and coconut milk in places a guest would not expect, so allergen free work starts by reading each sambal and each stock. Kosher is built as a sealed meal, halal is straightforward in Indonesia's Muslim-majority kitchens, and vegan and gluten free meals avoid the fish sauce that hides in dressings.
