Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

Local specialities from Lumbadzi for your inflight catering

Lilongwe District sits on the central plateau, and the table around it is built on what grows at altitude: maize, groundnuts, pumpkin leaves, tomatoes and the green vegetables the markets sell by the bunch. Inflight catering for a Malawi departure leans on that, with a private jet menu that reads simple and travels well.

The one dish every guest asks about is chambo, the tilapia from Lake Malawi, and it is the star of a local private jet menu. Grilled, it eats well cold; fried, it needs a dry box and the sauce apart. The inflight menu usually pairs it with nsima, which is better served warm in the galley oven than reheated from cold.

Local specialities also include roasted groundnuts, cassava, sweet potato and mandasi, the fried dough that works as a private jet food snack. Malawi Gin, Carlsberg Malawi and Kuche Kuche are what charter guests ask for at the bar. In Lilongwe District we cook this and pack it for the drawer: chilled boards under the seat plan, hot courses sealed with the sauce apart.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Kamuzu International Airport (FWKI)

Kamuzu Airport sits on the Lilongwe plateau at 4,035 ft, a thin-air runway where cold items stay cold only if they are packed for it. Private jet catering at FWKI is built around that: chilled boards for the drawer, hot courses sealed for the oven, and crew meals on request. Inflight catering and in-flight catering for a Malawi departure usually start with chambo, groundnuts and highland tea, packed for a galley that rarely has more than one oven. Aviation catering here is a quiet business: business aviation catering for the odd corporate arrival, executive jet catering for safari repositioning, diplomatic flight catering when a delegation lands, and cabin crew meals when the cabin crew has no time to leave the aircraft.

Corporate and VIP jet catering at Kamuzu International Airport (LLW)

Business jet catering and corporate jet catering at Kamuzu are driven by safari and lake charters, where VIP flight catering means short, warm menus packed for a small galley. Charter flight catering is ordered with the tail and the slot, and luxury inflight catering for Malawi leans on chambo and highland produce. A private jet chef can write a bespoke menu for a family going to the lake or a delegation arriving from Lilongwe.

State & royalDiscretion, protocol

Head of state and government inflight catering at Kamuzu International Airport (LLW)

State visit aircraft catering at FWKI is planned around the delegation: the protocol office clears the menu, the kitchen works from a named list, and delivery goes airside through the handling agent. Government flight catering, head of state flight catering and VIP aviation catering stay discreet, with no names on the labels.

Kosher, halal, vegan and gluten free in-flight catering at Kamuzu International Airport (LLW)

At Kamuzu International the allergen hiding in the local cuisine is groundnut: it sits in sauces, relishes and pastes, and a cabin can be affected by traces. Kosher, halal, vegan, gluten free, special meals, allergen free and kids meals are each cooked, boxed and labelled apart, with a card in the drawer. Tell us the restriction and the tail, and the box is packed so nobody opens the wrong tray.

Crew & pilot mealsOn request

Crew meals & pilot meals at Kamuzu International Airport

Crew meals at FWKI are on request and invoiced like the rest of the order. For flight crew meals and pilot meals on a Lilongwe turnaround, we pack crew catering in boxes with hot dishes that eat well one-handed: cockpit meals of grilled chicken and rice, or chambo with a vegetable side. Crew meal boxes go in the same delivery as the cabin order. Different meals for pilots are a standard request, so captain and first officer never share a dish.

FBO catering at Kamuzu International Airport (LLW): delivery to your aircraft

FBO catering at Kamuzu means handing the order to the right door. Catering delivery to the FBO or the general aviation terminal follows the slot, and ground handling catering is agreed with the handling agent beforehand. Handling agent catering here is simple because the apron is small and access is controlled.

High loader delivery for jet catering at Kamuzu International Airport (LLW)

Light jets and turboprops are the common sight at Lumbadzi, but a state visit or a wide-body repositioning needs a high loader. Galley catering for those aircraft is coordinated with the handling agent: airside catering delivery waits for the ramp slot, and aircraft provisioning is staged by door height and galley layout. Smaller aircraft are carried by hand to the steps; larger ones are lifted to the door.

About the airportFWKI / LLW

About Kamuzu International Airport (FWKI): aviation catering and general aviation

Kamuzu International is Malawi's main gateway, serving Lilongwe and the central region from a plateau at 4,035 ft. Airport catering here supports general aviation and business aviation from a single terminal, with FBO services and ground handling services provided by the handling agent. It is a quiet business aviation hub, busiest in the dry season.

Business aviation

Kamuzu sees safari repositioning, lake-bound charters and the occasional government arrival. Inflight catering and in-flight catering for these flights are small and specific. Aviation catering and business aviation catering are ordered per tail; executive jet catering suits light jets, diplomatic flight catering follows protocol, and cabin crew meals are ordered separately.

Customs & food import

Malawi customs treat food as stores: sealed, declared and delivered airside. Imported meat, dairy and fresh produce can be inspected, and a night or early departure needs the handling agent to arrange access. Catering produced locally avoids the border altogether.

★★★★★LARGE CABIN
“Good preparation made the difference at LLW, where 12 guests expected vegetable tartlets and a dessert selection despite a small galley worktop. For our team, the strongest part of their VIP flight catering was how they handled storage requirements. The Galley Girls gave us an update on the fruit plates before the handover, which helped us organise the cabin checks. The cabin team could match the snack boxes to the request before moving on to the remaining departure tasks.”

“An order of beef fillet with roasted potatoes for 4 people at Kamuzu International Airport had to be organised around different crew meal preferences. With charter flight catering, careful attention to catering handover matters as much to our crew as the menu itself. The Galley Girls prepared the fruit plates for assembly in the galley, with the accompanying elements easy to locate. It made a difference to have the crew provisions ready without cluttering the galley work area during preparation.”

★★★★★BUSINESS JET
“Choosing a light pasta dish with grilled vegetables for 10 people at FWKI was straightforward; the challenge was making it work with a short ground stop. We changed the quantities of starters, and The Galley Girls reflected the request in the final packing list. There was no need to reconstruct the fruit plates quantities from several messages during the final departure checks. I appreciated the emphasis on crew briefing throughout the private jet food arrangements.”

Kamuzu International: the questionsAsked by crews
How much does private jet catering cost at Kamuzu International?+

Cost follows what the menu needs and when the aircraft leaves. Dry-season departures from FWKI mean fuller ramps and busier markets, so fresh Lake Malawi fish is priced differently from the same dish in the rains. A short menu for four is a different invoice from a full service for twelve.

What is the lead time for private jet catering at FWKI?+

Lead time is shortest when we already know the aircraft. At LLW, a return leg ordered from here for the way back is written once and packed once. A new request arriving late is handled too, with the menu adjusted to available produce.

What about customs for catering at Lumbadzi?+

Food coming into Malawi on a private jet can be inspected; local catering is simpler because it never crosses the border. For a night or early morning departure, we agree the access with your handling agent before we cook.

Can you bring food to Kamuzu International yourself?+

Technically yes, but the handling agent and airside access make it harder than it looks. Passengers' food is better ordered locally and delivered sealed. Crew can carry personal meals, subject to Malawi customs rules.

Is catering part of a charter into Lilongwe?+

Not as standard. Charter operators in Malawi generally leave the menu to the client, and catering is invoiced separately. An empty-cabin repositioning flight needs only what the crew will eat.
