Three of us. All ex VIP cabin crew.

We know the galley, the diet card and the 5 a.m. re-plate — because we lived them. So we built the caterer we always wished we could call.

Lima on the plate: local specialities for in-flight catering at LIM

Lima is a coastal city that eats from the Pacific, and the local specialities make a strong private jet menu if they are packed the way a galley needs. Ceviche is the obvious request: the fish, the lime-and-chilli leche de tigre and the garnish of sweet potato and corn travel in separate containers so the fish never cooks in transit, and you assemble it at the seat. Causa limeña, the layered potato terrine with chicken or crab, is an inflight menu favourite because it is served cold and holds its shape through a long leg.

For private jet food on the hot side, anticuchos de corazón are grilled, sealed and finished in the oven, while lomo saltado is packed with the rice apart so the beef keeps its sear. Local specialities from the wider Lima Region add sweet touches: suspiro a la limeña in single cups, and lucuma, the Andean fruit, in a mousse or ice cream held at temperature. Each item carries its service note so the crew knows what goes where on arrival.

The three founders, former VIP cabin crew, on a business jet airstair — private jet catering at Jorge Chávez International Airport (SPJC)

Lima sits at 113 ft on a coastline that is grey and damp for half the year, and the cabin crews who work Jorge Chávez know how that changes a galley load: a chilled causa holds, a fried plate does not. Our private jet catering at SPJC is built by former VIP flight attendants around that reality. Inflight catering and in-flight catering orders for Lima are cooked for the oven and drawers you actually have, and aviation catering for business aviation catering flights comes plated in boxes you can re-plate without thinking. Executive jet catering for a CEO rotation, diplomatic flight catering for a state visit, cabin crew meals for the long return leg: each is written onto its own card.

Business aviation catering at Jorge Chávez International Airport (LIM)

Business jet catering at Jorge Chávez is usually a short brief with a precise galley behind it. Corporate jet catering and VIP flight catering for a Lima rotation are written by a private jet chef around a bespoke menu: chilled Peruvian starters, a hot main that survives the oven, charter flight catering for groups who change the headcount late. Luxury inflight catering does not mean more plates, it means the right ones for the aircraft.

Private jet catering for government and royal flights at Jorge Chávez International Airport (LIM)

When an official delegation lands at Jorge Chávez, government flight catering is about discretion. Head of state flight catering follows the protocol office's instructions, VIP aviation catering uses a small named team, and state visit aircraft catering keeps traceability from kitchen to cabin.

Halal, kosher and kids meals: inflight catering at Jorge Chávez International Airport (LIM)

In Lima, halal is the exception rather than the baseline, so a halal or kosher request needs its own certified source and a sealed container from the first step. At Jorge Chávez we run vegan, gluten free, allergen free and kids meals the same way: separate board, separate box, card marked with the seat number. Peruvian kitchens use a lot of corn, peanut, ají and fish sauce, so the allergen check happens before the menu is written. Special meals follow the airline-style codes, and each tray is labelled by restriction so a passenger tray is never opened by mistake.

Crew & pilot mealsOn request

Crew meals & pilot meals at Jorge Chávez International Airport

Crew meals at SPJC are ordered with the trip and invoiced like any other item, on request and never assumed. Flight crew meals for a Lima turnaround are packed as crew meal boxes: a lomo saltado or an ají de gallina that eats well from a lap, labelled CREW so it stays apart from the guest trays. Pilot meals and cockpit meals are written for one-handed eating on the flight deck, and different meals for pilots are available when operator policy asks for it, so captain and first officer never share a dish. Crew catering also covers the rest of the cabin, cold or hot, boxed or plated.

Galley-door delivery and aviation catering at Jorge Chávez International Airport (LIM)

Galley catering at Jorge Chávez depends on the aircraft type: a Challenger or Gulfstream takes a few boxes through the door, a large ACJ or Boeing business jet needs aircraft provisioning with a high loader. We ask for the type and the door height before packing, because airside catering delivery at SPJC is handled by the handling agent, and the way the load goes onto the aircraft decides how we cut and stack it.

About the airportSPJC / LIM

About Jorge Chávez International Airport (LIM): airport catering for business aviation

Jorge Chávez International is the main airport of Lima, with a general aviation presence and FBO services on the field. Airport catering here serves private and business flights from a coastal city at 113 ft. Ground handling services are organised through the handling agent, and business aviation traffic is steady through the year.

Business aviation

Lima is a business aviation hub for Peru and the Pacific coast of South America. Inflight catering and in-flight catering for executive jet catering, diplomatic flight catering and cabin crew meals all pass through SPJC. Aviation catering and business aviation catering here are shaped by the garúa season and long sectors north and south.

Customs & food import

Peru restricts the import of fresh meat, dairy, fruit and plant material, and officers apply this at Jorge Chávez. Food loaded for departure is handled through your handling agent, and leftovers from abroad may be removed. We plan the load to avoid any return of fresh product.

★★★★★BUSINESS JET
“Breakfast was already sorted; at Jorge Chávez International Airport, the next request was a cold lunch with cheese and fruit for 4 guests, with a revised passenger count to work around. I appreciated the emphasis on galley preparation throughout the private jet catering arrangements. I wanted clear identification on the sandwiches; The Galley Girls made the packing arrangement easy to compare with the order. Keeping the main courses identifiable helped the colleague taking over service understand the order without another long explanation.”

★★★★★LARGE CABIN
“Good preparation made the difference at SPJC, where 6 guests expected a cheese board and savoury canapés despite a tight boarding window. The Galley Girls kept the breakfast portions separate from the finishing elements, which gave us control over the final presentation. It made a difference to have the snack boxes ready without cluttering the galley work area during preparation. Our brief for private jet catering services was met with a sensible plan for galley preparation.”

★★★★★VIP AIRLINER
“Despite a revised passenger count, we wanted the 4 guests at LIM to enjoy mini sandwiches and individual desserts without a complicated cabin service. After a final adjustment to the desserts, The Galley Girls gave us one revised order summary to work from. There was no need to reconstruct the crew provisions quantities from several messages during the final departure checks. I want a private jet catering company to understand packing arrangement, and this order gave us a useful starting point.”

Ordering for SPJC, in shortAsked by crews
How much does private jet catering cost at Lima?+

Price is set by what you choose, not by a fixed rate. During the coastal garúa months from June to October, some fish and shellfish are harder to source, and an anticuchos platter will cost differently from a tiradito. Send the passenger count and we build the figure from the dishes.

What is the lead time for private jet catering at Jorge Chávez?+

With two services on board over a long Lima departure, lead time is about the plan, not about speed: where each dish sits and who serves it. Last-minute orders are handled, and we confirm each step before you go.

What are the customs rules for catering at Lima?+

Customs for catering at SPJC: food for use on board is handled airside through your handling agent, and Peru is strict about leftovers of animal and plant origin on return flights. The turnaround and your departure slot decide how we schedule delivery and what you take back.

Can you bring food into Peru on a private jet?+

Packaged food is usually accepted; fresh produce, meat and dairy are the problem on arrival at SPJC. To avoid trouble, order the return leg from Lima: it is packed here, loaded plane-side and has no border to cross.

Is catering part of a charter into Lima?+

Not as such: the charter price does not include what is served on board. At Jorge Chávez, you send us the tail and the slot, we build the menu and invoice it apart. Late changes in passenger numbers are accommodated.
