Bay of Plenty Region gives Rotorua its pantry: kiwifruit, avocado, citrus, Manuka honey and lake trout, with New Zealand lamb and venison from the surrounding farmland. Our private jet menu for NZRO starts from what is in season in the region and what survives a flight.
Hangi-inspired dishes are a local signature, with slow-cooked meat and kumara. On an inflight menu they become sliced lamb with a sauce apart and roasted kumara, finished in the galley oven. Private jet food here also means cold smoked trout, pickled beetroot and a crisp salad kept chilled until service.
For private jet platters we pair regional cheese, honey, fruit and cured meats. Gourmet inflight meals are plated per seat and marked by guest. Private jet snacks include nuts, dried kiwifruit and honey-sweetened bars. All of it counts as local specialities of Rotorua, packed for the galley in front of you.
Menus stay short and tied to the season. Where a dish needs a re-plate, a sauce on the side or a cold hold, we say so on the lid and the order sheet.
