The plate that says Ulaangom is mutton. Whether boiled with root vegetables or minced into steamed buuz, it is the dish a Uvs Province kitchen does best, and one of the few that survives a freezing apron in a sealed pot. Our private jet menu leads with it, re-plated in your galley.
Our inflight menu also draws on Mongolian dairy, which is distinctive in Uvs Province: aaruul, tarag and urum, plus suutei tsai from a thermos. They are local specialities, and they pack as private jet snacks without a heat step.
Private jet food for a cold, high airfield like ZMUG favours dishes that tolerate waiting: dumplings, braised meat, soup with the broth sealed apart. Gourmet inflight meals here are less about delicate garnish and more about what arrives hot and intact after a long, cold turn.
Fresh produce is the honest limit. Short Mongolian summers mean salad is seasonal; the rest of the year we lean on cabbage, carrot, potato and pickles, and flag substitutions in the brief. Private jet platters for a cabin become mutton, dumplings, cured cheese and bread.
