Sarawak eats from the river and the sea, and a private jet menu for Miri reflects that. Prawns, freshwater fish and wild jungle ferns turn up on the table far more often than imported produce, and our private jet food follows the same logic where the season allows.
Kolo mee, the dry-tossed egg noodle dish found across Sarawak, travels well as one of the private jet platters: noodles packed apart from the minced pork topping and the sauce, finished in the galley. Sarawak laksa, with its spiced shrimp-based broth, is a gourmet inflight meal when the broth rides in a sealed container and the noodles stay chilled until service.
Umai, the Melanau raw fish salad cured in lime, is a cold local speciality that suits an inflight menu if it is packed over ice and plated at the last moment. Midin, the jungle fern, is blanched and served as a side. For private jet snacks we pack kek lapis Sarawak, the layered cake, and fresh tropical fruit.
Miri's local specialities lean on chilli, lime and lemongrass. We adjust heat for the cabin, keep the sambal in its own pot, and note the Sarawak provenance on the menu card so crew can describe each dish.
